Learning about vegan, vegetarian, and omnivorous diets can drive you crazy. There are factions for each, and some are quite passionate. Some say vegetable protein is incomplete compared to meat. Others claim red meat is carcinogenic. Still others boast that they have proven vegans end up spending more on all the supplements they have to take. Perhaps you can't generalize, and the key lies in what kind of food, vegetable or animal, is ingested.

A Classic Vegan Restaurant

After this diatribe (which comes, by the way, from an omnivore), today we present: Forever Vegan. The place on Guanajuato Street is on a corner; the entrance looks Art Nouveau; the interior is simple and comfortable. Nothing fancy. In this restaurant's declaration of principles, you can read the following: "100% plant-based, no preservatives, no refined sugar, no artificial additives... (we prepare) cruelty-free food." (Did they torture the chef?). No, it's not true: the important thing for them is the idea that animals are not things, that they feel, that they have emotions, and that they should not be made to suffer (or eaten).

Healthy Dishes at Forever Vegan

Forever Vegan's dishes are "healthy and sustainable (...) with fresh, local ingredients." The raw coastal ceviche is made with coconut; the raw pesto pasta is made with zucchini; the Forever burger is made with beans. But we can also devour some tempura flowers; mushroom aguachile, tacos al pastor with marinated mushrooms; the milanesa with breaded eggplant and Beyond Meat (from the American company Beyond Meat, which produces vegan meat that resembles animal meat in taste and texture), and something truly fabulous: vegan pizza!
