Unusual Restaurants CDMX / Malix Restaurant, culinary mestizaje
Fusion cuisine, in a restaurant-cafe-wine bar using ingredients from local, environmentally conscious producers.
By Alejandro Pohlenz
I write the words "culinary mestizaje" with a purpose. I believe it is a grandiloquent or pompous way of saying that Malix's food is influenced by various cultures, trends, and countries. However, Malix is not bombastic or arrogant, as these phrases reflect (I can't decide on one): "Reimagines the contemporary culinary scene of CDMX." Or, "interprets the culinary essence of our country", (is a) "sanctuary of sustainability", or "revolutionizes Mexican food."
What Malix really is
Malix is a small, very beautiful, interesting, and delicious restaurant that does not require so many adjectives. Indeed, Alonso Madrigal is a creative chef, who tries to use raw materials from nearby suppliers that have good environmental practices; who imagines new menus every week in which he includes seasonal ingredients; who is open to other influences; who lists his suppliers on the menu so that the diner knows them and who is an original artist.
Malix (pronounced ma-lish) means "stray or mixed-breed dog." That's what they call "culinary mestizaje," a pleasant combination of elements, shapes, flavors, colors, ingredients, names, and preparations.
The seasonal menu
On the menu (at this time, because it is constantly metamorphosing), you can see very interesting things such as braised duck (it is a starter), cured mackerel, green broccoli mole, wagyu tartare, grilled lettuce, salmon trout, purple potato dumplings, tomato chutney (which is a mixture of spices from India) and beef tenderloin (Mexican wagyu). What I propose here is that you have to go to the malish to enjoy the food and the atmosphere without so much pomp and circumstance.
