Michelin-Starred Restaurants in Mexico / Signature Cuisine: 7 Astonishing Courses That Constantly Evolve

In Taipei, on the island of Taiwan (which does not—at least not yet—belong to the People’s Republic of China, though they’ve certainly got their eye on it), home to some 24 million people, there’s a shopping mall—think something like Perisur. There, the restaurant Din Tai Fung earned its Michelin Star for its “flawless dumpling execution.”

I must confess something. Many of the restaurants that have received the prestigious Michelin distinction in Mexico—with the refreshing exception of El Califa de León—tend to be a bit pompous, fancy, and somewhat pretentious. Most of them fall under the category of “haute cuisine.” That’s why it’s so satisfying when restaurants in gas stations or bus terminals take home awards. My other confession: I’m not a fan of all-inclusive hotels. But hey, to each their own, right?

A luxury resort in the Riviera Maya

That said, let’s move on to Grand Velas Riviera Maya, which opened in 2008 and was founded by Eduardo Velas Ruiz. That same year, within this (yes, all-inclusive) resort, a restaurant was created that would go on to earn a Michelin Star in 2024. With all due respect, they didn’t put much thought into the name. I apologize, but calling a restaurant “Cocina de Autor” isn’t exactly groundbreaking (I even made it rhyme). And their first slogan—well… it’s a bit of a cliché. Judge for yourselves: “It transforms into a culinary experience for all the senses.”

Originally, the restaurant Cocina de Autor was helmed by chef Xavier Pérez Santos. Today, the captain of the ship is Nahúm Velasco, who invites diners to “enjoy a liberated gastronomic adventure that reflects the joy of living.” The tasting menu I’m looking at features 11 courses, with creativity as the central focus. Here are a few examples: “The World of Jackfruit” (the world’s largest fruit, from tropical trees), “Sea Bacon” (tuna bacon), “Very Fresh Hamachi”, “Earthly Greens” (with the catch of the day), “Roasted Venison” (with coffee, pine nuts, and cacao), and “Chlorophyll” (a mix of quelites, ice cream, apple, and mousse).

In addition to its Michelin Star, Cocina de Autor received the Michelin Service Award 2025. And yes—the service truly is impeccable.

What we love and you must try: The Hamachi.
What we don’t love as much: Not a fan of the mussels.
