From Tijuana to Nuevo Laredo, grilled meat (asada) reigns in the north. The wide-brimmed hat mixes with the bajo sexto, accordion, and drums. Belt buckles compete in creativity, pride, and size, and like them, flour tortillas reign supreme. Admittedly, burritos sometimes intrude, yes, we won't deny it, but ultimately, the north is also Mexico, and Mexico is the taco.
La Guía Domingo is a kind of taco recount, with reviews and a symbiosis that, through several books, seeks to confront and combine art, tacos, and photography. A curious encyclopedia that evolved into a project that exalts taco culture, if we can call it that. The first edition was titled "By far, the best tacos in CDMX." But it went further. The consequences of actions and northern entrepreneurship gifted us with a taqueria that maintains the essence of the guide and brings us closer to every border city, every accordion with a hat, and every corner of grilled meat in Monterrey, Juárez, Tijuana, Hermosillo, and a corner of the capital of the republic.
No one can return from the north or the border areas without having tried their tacos. I think they're superior, but when it comes to tacos, a Mexican always knows that no one, nothing, can claim the title of "the best tacos in Mexico." Subjectivity rules when it comes to tacos. Taste, heart, and genetics prevail; memories too, because I carry the best tacos in the corner of my childhood. In any case, there's a taqueria in the Historic Center of Mexico City that offers a taste of northern grilled meat right in the heart of the city.
If you go to Tacos Domingo, you'll come out smelling of charcoal, meat, smoke, northern taco. The charcoal school makes its presence known to prepare our protagonist. With "asada," as the northerners say, pork chops and ribs by obligation, and the occasional colados volcano on the menu. At Tacos Domingo, you won't rack your brain. Their minimalist menu protects your mind. When it comes to tacos, that's appreciated. If you're in a hurry, you'll decide quickly. All you'll have to choose is the type of tortilla because, in northern tradition, flour tortillas are present, don't forget that. And yes, one of the stars here is dessert, the Crepa Domingo, with caramel and walnut that will make you forget the smell of charcoal, don't forget it.
